Day 43 – February 12

Crack. Today I made crack . .. . at least that’s what it’s been called. I’m not sure why it’s called that. I mean, it’s delicious, but I’m not delirious or hallucinating or anything. So, maybe I’ll just stick to calling it loaded potatoes. It’s really the most processed food ever. There’s nothing fresh about this recipe, but it’s easy and oh so good!

2 16 oz containers sour cream
2 cups cheddar cheese, shredded
2 packages Ranch Dip (I only used one of the Fiesta flavor, and that was plenty)
2 3 oz packages of bacon bits (I used I package of Morning Star Stipples cut into little pieces)
1 large package of frozen hashbrowns.

Mix the first 4 ingredients in a bowl, add the potatoes. Spread into a 9×13 casserole dish and cook for 45-60 minutes at 400 degrees.

Try it, it’s really delish!
